Ingredients:
1 can (15 oz) white beans, rinsed & drained well
2 cloves garlic, minced
2 tablespoons lemon juice
1/4 teaspoon dried oregano (or dried parsley)
dash of salt and pepper, optional
Directions:
1. Place all of the ingredients in a food processor and blend until smooth and creamy.
2. Serve with assorted raw vegetables (carrots, celery, jicama, zucchini, pea pods, and cucumbers are all delicious), or assorted whole grain crackers.
3. Promptly refrigerate leftovers.
